A little food in such places is a given, and would show that they're cleaning it regularly (if the food isn't moldy).
That, however, looks like black mold. That stuff is actually dangerous to health (inhaled spores are really bad) and, if it is that, you should walk out and tell them to get a licensed cleaner in to get rid of it first. Are you in Nepean ?

When I did AC service that would be and immediate discussion with the kitchen manager and the staff would need to clean it before I go anywhere inside that. If they say no I would put it back together and say it cannot be fixed. It is total disrespect to make any repair tech need to work that condition and that is not even speaking about the health violations.

I've found plenty of coolers that store plant based stuff with that disgusting black slime. It take a long time not being cleaned for plants to break down and form that sludge mold
In a lot of Western European countries if food safety inspection found that in your reach-in you'd be fined heavily or even have to close down the restaurant… It almost seems that safety is an afterthought in American culture and regulation. Especially food regulations or electrical regulations. I'm not saying that all things European are great, far from from it but I've had multiple occasions watching your videos where I was thinking to myself "That would have been highly discouraged or outright illegal on our side of the planet". Nothing to blame you for Chris, I love your videos and your work .
