So they are complaining about smoke everywhere but all the fans and makeup air unit are working, the hood filters and acs are all working too, so I guess it's time to pretend I'm an airbalance tech and adjust a few things.

    Actually the make up air is not enough to help push the steam into the hood or a have grill has been moved and is blowing right in front of the hood only use two way Grills near hood also check how clean the exhaust fans are

    One thing I've always noticed, most of the McD's or any drivethrough I go to, I always see the air rushing inward in the drivethrough windows some significantly moreso than others. Considering the sheer amount of smoke hoods some restaurants have. Though I would imagine that making sure to have enough makeup air to the kitchen to stop hot/cold outside air from rushing into the customer area would be more desirable, but they probably see the costs to install/fix the makeup air unit and they would rather not threaten their dodge charger fund.

    I have a friend that works in a kitchen for a retirement home, and there's so much air leaving and so much air coming inward that they just plain don't bother cooling it, and only have mild heat because of the sheer amount of makeup air they have to deliver into those kitchens. I wonder if this is how some kitchens do it.

    The fryers are too close to the end of the hood and the hood can not capture the amount of moisture released all at once when chips are dropped.

    this is a typical problem in many restaurants. Sometimes it happens when doors are opened.

    Fryer grease is the worst to clean off of coils.
